This “Best Local Cook” recipe comes from South Shelby high schooler, Melanna Eagan. During this extra long break from school, Melanna has perfected her cupcakes. She loves to add extra toppings, beautiful liners and drizzles to make her cakes look as good as they taste! She would love to one day have a cute trailer to take to events and festivals to sell her cupcakes!

Melanna Eagan's Georgia Peach Cupcakes
Ingredients
- 1 box vanilla cake mix
- 1 box instant vanilla pudding
- 1/2 cup canola oil
- 1/2 cup water
- 1 cup sour cream
- 3 eggs
- 2-3 chopped peaches, processed in a blender to make puree
Instructions
Mix all ingredients together on high speed for 4 minutes. Spray cupcake liners with non-stick cooking spray- then fill with batter. Bake 350 for 14-16 minutes.
Melanna Eagan's Georgia Peach Icing
Ingredients
- 4 sticks softened unsalted butter
- 3-4 cups powdered sugar
- 1 t. vanilla extract
- 1/2 cup whole milk
- juice from 2 peaches
Instructions
In a large bowl beat butter for 4 minutes, gradually add powdered sugar and beat for another 2 minutes.
In a small bowl pour milk, vanilla extract, squeeze in the juice from 2 peaches. Slowly pour into sugar mixture.
Allow cupcakes to cool completely before frosting!
